A successful Pinterest find

I was hesitant to join Pinterest...I really don't have time for it at all. BUT I caved in and finally asked for an invite.  Yea, I really don't have time for this, BUT I have made time :)


One of the first things I pinned was this:


















These are meals for the crockpot that are bagged and frozen.  In the morning, you open the bag, maybe add a couple of easy ingredients, set the crock pot and go.  I thought this was BRILLIANT!!!  




I hate having a  mess in the kitchen...I'm a bit OCD about it.  It was tough having my kitchen look like this:






While I was in the kitchen my 14 year old daughter asked me if I thought spending all day in the kitchen to prepare these meals instead of an hour a day for each was worth it.  AHHH...YEAH!  And it only took me 3 hours not all day.


Today I bagged my crockpot meals.  In approximately 3 hours I made 7 meals for the crockpot.  I also made 2 chicken pies.  My idea was to freeze both pies, but hubby asked if we could have one for lunch....ok, I guess so :/

Success thus far...the real test will be in the taste...I'll let you know what we think.

    I used to cook for the month when the kids were toddlers. I really want to get back into it. I'm in the process of figuring out what new recipes would freeze well. I've had to change all my recipes now that there are food allergies in the family.
    I would cook on a Saturday and freeze lasagnas, chicken pot pies, beef and bean burritos, chicken soup, manicotti, stuffed shells, dynamites, batches of meatballs, etc. It's fantastic when you can just take something out of the freezer in the morning to defrost and then just pop it in the oven for supper. I cooked up a storm at the end of each of my pregnancies and froze 4 months of dinners! Not having to worry about dinner with a newborn in the house was amazing! Thanks for motivating me. I really need to start this up again, especially since I have so much more cooking to do now. I bake fresh bread 3 times a week now because we can't have gluten and my husband can't have eggs. I also make ice cream with coconut milk because I can't tolerate dairy.
    Another thing that really helps to keep your freezer full is to double or triple your recipe whenever you are cooking something. Eat one and freeze the others. We soak all our grains, rice, and beans over night and then cook them to make them easier to digest. It's a real pain to do during the week. I do it on the weekend and then have my rice and beans in the fridge to use throughout the week. Please tell me if you have any other great tips! :)

    1. Wow, Cheryl, that's a lot of work in the kitchen.
      I've always wanted to do a once a month cooking day, but just never did...this is as close as I've gotten.
      I have done the double/triple recipe a few times, too
