Potato Donut recipe


A couple months ago a reader asked me for my potato donut recipe.  As you realize, I have not been posting on this blog very much at all.  Life has taken over and I haven't taken the time to write.  I am HOPING to change all that, but I'm not making any promises.  Please keep checking back, though....you never know, there may be something interesting you might miss ;)

Ingredients:
2 Cups flour (I use unbleached white, but sometimes sneak in a bit of freshly ground spelt)
1 1/2 teaspoon salt
1/4 teaspoon nutmeg
2 teaspoons baking powder

Combine the above in a bowl

1 Cup mashed potato
2 eggs
1 Cup sugar (I use turbinado which is a 1:1 exchange with white sugar)

Mix these 3 ingredients until smooth

Add the dry to the wet, mix until smooth dough

You will need A LOT of flour to roll it out on.  The dough is sticky.

On floured surface, roll dough to about 1/2 inch thick.  Cut.  Makes 12-15 depending on how thick you roll your dough.

Fry in hot oil (sorry, I don't know the temp of the oil.  I pop a hole in the oil, if bubbles form around it, I know the oil is ready)
