A few months ago I did an 10 day eat clean challenge with Casey Sollock where I was introduced to the green smoothie. At first I was not sure about adding something green to my fruit smoothie but I LOVE my green smoothies. A little spinach or kale added doesn't change the taste, in fact, I'd go so far as to say it enhances the flavors.
Since that 10 days I continue to enjoy green smoothies, maybe not everyday like I should, but these hot summer days they are a welcome cool treat.
Recently Casey sent out an email with a great snack called Raw Energy Bites. The ingredients combined 2 of my favorite foods...peanut butter and chocolate. So I knew it was one I had to try.
With only 6 ingredients and no baking this makes a super fantastic summer snack.
Next time I think I will substitute the peanut butter for almond butter and reduce the honey a bit as it was a tad strong for my taste buds.

Six ingredients? It's cutting it close, but I could try that one. I routinely turn away recipes with too many ingredients! Favorite cookbooks? Three-incredient cooking and five ingredient cooking! ;-)
